Maddie is having fun by the beach. She finds out how waves are formed far out to sea when the wind blows and how some of them are made by the tides. She visits a surfing centre and takes to the waves on a surfboard.

Leo's family is from Russia, and they have shown him how to make a special sharlotka, a simple Russian apple cake. Leo starts by separating the eggs. He then adds sugar and flour to the yolks and mixes them together until the mixture is smooth.
